When we made my first pourpoint, IIRC, we cut out pieces that looked liked the ones in the Charles de Blois, and we've never been really happy with the back seam. For my current pourpoint, we did exactly what you're doing: cut a single-piece back, fitted it on, saw where it wanted to wrinkle, and took in just enough there to make the wrinkle go away. Makes ever so much more sense....
